Ingredients
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 3/4 teaspoon kosher salt
- 1/2 teaspoon smoked paprika
- 1 tablespoon olive oil
- 4 chicken breasts, boneless and skinless
- 1 1/2 cups Monterey Jack cheese, shredded
- 1 (16-ounce) jar salsa verde
- cilantro, optional, to taste, chopped, for garnish
- green onions, optional, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -In a small bowl, add the chili powder, the cumin, the salt, and the smoked paprika and whisk to combine.
Step 4 -Rub the seasoning mixture and the olive oil over the chicken breasts, coating all sides.
Step 5 -Place the chicken breasts in the prepared baking dish in a single layer.
Step 6 -Add the salsa evenly over the chicken breasts.
Step 7 -Bake until the chicken breasts are almost cooked through, about 15-20 minutes.
Step 8 -Sprinkle the Monterey Jack cheese over the chicken breasts, then bake until the cheese has melted and the chicken breasts reach an internal temperature of 165 degrees F, about 5-10 minutes.
Step 9 -Transfer the chicken breasts to a cutting board and cut them into slices.
Step 10 -Top the chicken slices with the salsa verde sauce.
Step 11 -Garnish with the cilantro and the green onions and serve.
