Oh, is it not your birthday today? Frankly, who cares? It's time to celebrate regardless! And nothing is as celebratory as a breakfast with Birthday Cake Casserole! Combining fluffy cake with a French toast casserole is a fantastically sweet and comforting way to start a wonderful day... especially if you grab some icing to go with it! Birthday Cake Casserole just needs a candle to feel complete. Make a wish!
Ingredients
- For the casserole:
- 1 (14-16 ounce) loaf sourdough or French bread, cut into chunks
- 8 large eggs
- 2 1/2 cups milk
- 1/2 cup heavy cream
- 2 cups Funfetti® cake mix
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 5 tablespoons multicolored sprinkles
- For the topping:
- 1 cup Funfetti cake mix
- 1 stick salted butter, cut into pieces
- icing or frosting, optional, to taste, of your choice, for serving
Directions
Step 1 -Grease a 9x13-inch casserole dish.
Step 2 -In a large bowl, add the bread chunks.
Step 3 -In a separate large bowl, add the eggs, the milk, the heavy cream, 2 cups of the cake mix, the cinnamon, and the vanilla extract and whisk to combine.
Step 4 -Pour the egg mixture over the bread chunks and gently stir to combine.
Step 5 -Pour the bread mixture into the prepared casserole dish and spread it out evenly.
Step 6 -Spread the sprinkles evenly over the top of the bread mixture.
Step 7 -Cover the casserole dish and chill it for at least 8 hours and up to overnight.
Step 8 -Preheat the oven to 350 degrees F.
Step 9 -Uncover the casserole and bake for 25-30 minutes.
Step 10 -In a bowl, add the remaining cake mix and the butter and mix to combine until a crumbly mixture forms.
Step 11 -Sprinkle the crumbly mixture on top of the casserole and bake until the casserole and the topping are cooked through, about 10-25 minutes.
Step 12 -Serve the casserole warm with the icing.
