Ingredients

  • 8 ounces chorizo, ground or links with casings removed
  • 1 clove garlic, minced
  • 1 cup mozzarella cheese, shredded
  • 1 cup jarred queso quesadilla cheese
  • cilantro, optional, to taste, chopped, for garnish
  • tortilla chips, optional, to taste, for serving

Directions

Step 1 -Preheat the broiler.

Step 2 -In a medium-sized skillet over medium heat, add the chorizo and the garlic and cook, while crumbling the meat, until it is no longer pink, about 5-7 minutes.

Step 3 -Drain the fat from the skillet.

Step 4 -In a small, cast-iron skillet, add the mozzarella cheese and the queso quesadilla cheese.

Step 5 -Broil the cheese mixture until melted, about 2-3 minutes.

Step 6 -Transfer the cast-iron skillet from the oven and top the cheese mixture with the chorizo-garlic mixture.

Step 7 -Garnish with the cilantro and serve with the chips.
