Savory tuna and tender egg noodles, melty cheddar and a creamy mushroom sauce, all bubble away under a crunchy potato chip crust. Ingredients
- 1 (12-ounce) package wide egg noodles
- 2 tablespoons butter
- 1/2 cup yellow onion, diced
- 2 (10.5-ounce) cans condensed cream of mushroom soup
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1/3 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (12-ounce) can solid white albacore tuna in water, drained well
- 1 cup peas
- 1 cup cheddar cheese, shredded
- 1 cup potato chips, crushed
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13-inch baking dish with nonstick spray.
Step 3 -In a large pot of salted, boiling water, add the egg noodles and cook them 2 minutes shy of al dente, according to the package directions.
Step 4 -Drain the egg noodles well.
Step 5 -In a skillet over medium-high heat, melt the butter.
Step 6 -Add the onions to the melted butter and cook, while stirring, until the onions are tender and translucent, about 3-5 minutes.
Step 7 -In a large bowl, add the cream of mushroom soup, the mayonnaise, the sour cream, the milk, the onions, the salt, and the black pepper and mix well to combine.
Step 8 -Add the tuna, the peas, and the cheddar cheese to the soup mixture and mix well but gently to combine.
Step 9 -Add the egg noodles to the tuna mixture and gently fold until well-blended.
Step 10 -Transfer the tuna mixture to the prepared baking dish.
Step 11 -Top the tuna mixture evenly with the crushed potato chips.
Step 12 -Transfer the baking dish to the center rack of the oven and bake until the casserole is completely heated through and the noodles are tender, about 30 minutes.
Step 13 -Serve hot.
