  • 2 tablespoons salt
  • 1 tablespoon fennel seed
  • 3 tablespoons white sugar
  • 3 tablespoons paprika
  • 2 tablespoons chili powder
  • 4 teaspoons ground black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 6 pounds pork back ribs
  • 3/4 cup barbeque sauce
  • 3 tablespoons honey
  • 3 tablespoons cider vinegar

Directions

Step 1 -Grind the salt and the fennel seed together in a blender or coffee grinder.

Step 2 -Stir the fennel-salt mixture, the sugar, the paprika, the chili powder, the black pepper, the onion powder, and the garlic powder together in a bowl.

Step 3 -Cutting between rib bones, cut up each slab of ribs into 3 equal pieces. Each piece should have about 5 ribs in it.

Step 4 -Use paper towels to pat the ribs dry.

Step 5 -Using your hands, rub the spice mixture over the ribs until each piece is well coated.

Step 6 -Place the rib pieces on a plate or baking dish and cover them with plastic wrap. Let the ribs marinate in the refrigerator for 8 hours overnight.

Step 7 -Remove the ribs from the refrigerator and let them sit at room temperature for 1 hour.

Step 8 -Begin heating the grill to between 270 degrees F and 300 degrees F and prepare it for indirect grilling. Lightly grease the grates.

Step 9 -Place the ribs on the preheated grill and close the cover. Cook, turning once, until they are cooked through, about 1 1/2 hours. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Step 10 -In a small pan, mix together the barbeque sauce, the honey, and the cider vinegar.

Step 11 -Bring the sauce to a boil then reduce the heat and simmer for about 10 minutes or until the sauce is thickened. Stir occasionally and do not let the sauce burn or get too thick.

Step 12 -After the ribs have cooked for 1 1/2 hours, brush the sauce on the side of the ribs facing up until they are well glazed.

Step 13 -Continue cooking the ribs for an additional 15 minutes.

Step 14 -Flip the ribs over and brush sauce on the other side of the ribs. Cook for about another 15 minutes more or until the ribs are tender when pierced with a fork.

Step 15 -Remove the ribs from the grill and let them stand for 10 minutes.

Step 16 -Serve with extra sauce and enjoy!
