Ingredients
- 1 tablespoon olive oil
- 1 pound chicken breast, boneless and skinless, sliced
- 2 teaspoons Montreal Steak® Seasoning
- 1 onion, diced
- 4 cloves garlic, minced
- 1 (8-ounce) carton cremini mushrooms, sliced
- 3 1/2 cups fat-free chicken broth
- 8 ounces high-fiber pasta, such as whole-grain penne
- 1/2 cup parmesan cheese
- 1/4 cup half-and-half
- salt, to taste
- pepper, to taste
- fresh parsley, optional, to taste, chopped, for garnish
Directions
Step 1 -In a large pan over medium-high heat, add the olive oil.
Step 2 -Season the chicken slices with the steak seasoning.
Step 3 -Add the chicken slices to the pan and cook, while stirring occasionally, until the chicken slices are lightly browned and reach an internal temperature of 165 degrees F, about 5-7 minutes.
Step 4 -Transfer the chicken slices to a plate.
Step 5 -Add the onions, the garlic, and the mushrooms to the pan and cook, while stirring frequently, until the mushrooms are tender, about 4-5 minutes.
Step 6 -Add the chicken broth to the pan and bring it to a boil.
Step 7 -Add the pasta to the chicken broth mixture and let it simmer, while stirring, until the pasta is tender and has absorbed most of the liquid, about 12-15 minutes.
Step 8 -Add the parmesan and the half-and-half and stir to combine.
Step 9 -Add the chicken slices to the pan and stir to combine.
Step 10 -Season the pasta mixture with the salt and the pepper.
Step 11 -Let the pasta mixture rest until the sauce thickens slightly, about 5 minutes.
Step 12 -Serve garnished with the parsley.
