It's not a trip to our grandma's house without some kind of strawberry treat to enjoy. Her garden is flourishing with them, so she's always whipping up something new! For this visit she's made some Strawberry Icebox Pie — her fun, creamy take on the classic strawberry pretzel salad. It has a sweet pretzel crust that's filled with a tangy, strawberry-flavored filling and topped with fluffy, homemade whipped cream. We're in for a real treat with Strawberry Icebox Pie! Ingredients

  • 2 cups pretzel sticks, finely crushed
  • 1/4 cup light brown sugar, firmly packed
  • 3/4 cup butter, melted
  • 2 cups fresh strawberries, hulled and sliced, plus more, optional, to taste, for garnish
  • 1 (14-ounce) can sweetened condensed milk
  • 1 (8-ounce) block cream cheese, softened
  • 4 tablespoons plus 1 teaspoon strawberry gelatin
  • 2 cups whipping cream, divided
  • 1/3 cup granulated sugar

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Lightly grease a 10-inch pie plate.

Step 3 -In a bowl, add the crushed pretzels, the brown sugar, and the butter and mix to combine.

Step 4 -Press the pretzel mixture into the bottom and up the sides of the prepared pie plate to form the crust.

Step 5 -Bake the crust until it has lightly browned, about 10-12 minutes.

Step 6 -Transfer the pie plate to a wire rack and let the crust cool completely, about 30 minutes.

Step 7 -In a food processor, add 2 cups of the strawberries and process until they are finely chopped, scraping down the sides as needed.

Step 8 -In a large bowl, add the condensed milk, the cream cheese, and the strawberry gelatin and beat with an electric hand mixer on medium speed until it is smooth.

Step 9 -Add the chopped strawberries to the condensed milk mixture and beat on low speed until it is just blended.

Step 10 -In a large bowl, add 3/4 cup of the whipping cream and beat with an electric hand mixer on high speed until soft peaks form.

Step 11 -Gently fold the whipped cream into the strawberry mixture.

Step 12 -Spoon the strawberry filling into the cooled crust.

Step 13 -Cover the pie and freeze until it is firm, for at least 8 hours and up to 12 hours.

Step 14 -Before serving, in a large bowl, add the remaining whipping cream and beat with an electric hand mixer on high speed until it is foamy.

Step 15 -Gradually add the granulated sugar to the whipped cream and beat until soft peaks form.

Step 16 -Spread the whipped cream over the frozen pie.

Step 17 -Freeze the pie again until the whipped cream topping is firm, about 1 hour.

Step 18 -Garnish the pie with the extra strawberries, slice, and serve.
