Ingredients

  • 1 (30-ounce) package frozen shredded hash browns
  • 1 1/2 cups smoked ham, chopped
  • 3 tablespoons olive oil
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 2 tablespoons fresh chives, chopped

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -In a large bowl, add the hash browns, the ham, the olive oil, the salt, and the black pepper and stir to combine.

Step 3 -Cut six (12-16-inch) pieces of foil.

Step 4 -Lightly coat the foil pieces with nonstick spray.

Step 5 -Divide the hash brown mixture into 6 equal portions.

Step 6 -Add the 1 portion of the hash brown mixture to the center of each piece of the prepared foil.

Step 7 -Sprinkle the hash brown mixtures evenly with the cheddar cheese.

Step 8 -Fold up the four sides of each piece of foil to create packets, making sure the hash brown mixtures are covered completely and the packets are sealed.

Step 9 -Place the packets on a baking sheet.

Step 10 -Bake until the cheese has melted and the hash browns are heated through, about 20-25 minutes.

Step 11 -Serve immediately garnished with the chives.
