Ingredients

  • 1/2 pound ground Italian turkey sausage
  • 1 1/2 teaspoons canola oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 2 cups water
  • 1 (15.5-ounce) can great northern beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (14.5-ounce) can low-sodium chicken broth
  • 3/4 cup elbow macaroni
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach leaves, cut
  • parmesan cheese, to taste, shredded, for topping

Directions

Step 1 -In a large saucepan over medium heat, add the sausage and cook, while stirring, until it is no longer pink, about 6-8 minutes.

Step 2 -Transfer the sausage to a plate and drain the excess fat from the saucepan.

Step 3 -In the same saucepan over medium heat, add the canola oil.

Step 4 -Add the onions to the hot oil and cook, while stirring, until tender, about 5 minutes.

Step 5 -Add the garlic to the onions and cook, while stirring, until fragrant, about 1 minute.

Step 6 -Add the water, the beans, the tomatoes and their juices, the broth, the macaroni, and the black pepper to the onion mixture and stir to combine into a soup mixture.

Step 7 -Bring the soup mixture to a boil.

Step 8 -Cook, uncovered, until the macaroni is tender, about 8-10 minutes.

Step 9 -Reduce the heat to low.

Step 10 -Add the sausage and the spinach to the soup mixture and stir to combine.

Step 11 -Cook the soup mixture until the spinach is wilted, about 2-3 minutes.

Step 12 -Top with the parmesan cheese and serve.
