Ingredients

  • For the brine:
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons oregano
  • 1 teaspoon cayenne pepper
  • 1 tablespoon salt
  • 1 cup buttermilk
  • 1 egg, beaten
  • 1 (3-pound) whole chicken, butchered into 10 pieces
  • For the breading:
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • cooking spray, to taste

Directions

Step 1 -In a large bowl, add the smoked paprika, the black pepper, 2 teaspoons of the garlic powder, 2 teaspoons of the onion powder, the oregano, the cayenne pepper, 1 tablespoon of the salt, the buttermilk, and the egg and whisk to combine.

Step 2 -Add the chicken pieces to the brine and mix until they are covered.

Step 3 -Place a sheet of plastic wrap directly on the surface of the chicken pieces.

Step 4 -Marinate the chicken in the refrigerator for at least 30 minutes and up to 2 hours.

Step 5 -Preheat the air fry to 300 degrees F.

Step 6 -In a large bowl, add the flour, the cornstarch, the baking powder, the remaining salt, the remaining onion powder, and the remaining garlic powder and mix to combine.

Step 7 -Working with 1 piece of the chicken at a time, transfer the chicken from the brine and shake off the excess.

Step 8 -Dredge the chicken in the flour mixture.

Step 9 -Transfer the coated chicken to a plate and repeat until all of the chicken pieces are breaded.

Step 10 -Coat the air fryer basket completely with cooking spray.

Step 11 -Add the chicken to the air fryer basket, making sure no pieces overlap. You may need to cook in batches.

Step 12 -Spray the tops of the chicken pieces with the cooking spray until they are thoroughly coated.

Step 13 -Air fry the chicken for 20 minutes.

Step 14 -Carefully flip the chicken and spray the tops with the cooking spray until thoroughly covered.

Step 15 -Increase the air fryer temperature to 400 degrees F and cook the chicken until the breading is golden and the biggest piece of chicken reaches an internal temperature of 165 degrees F, about 15-20 minutes.

Step 16 -Serve.
