Ingredients

  • 1 1/4 cups orzo
  • 3 cups chicken breast strips, grilled and chopped
  • 1 1/2 cups arugula, trimmed
  • 1 cup grape tomatoes, halved
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup red onion, chopped
  • 2 tablespoons basil, chopped
  • 1 teaspoon oregano, chopped
  • 2 tablespoons red wine vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 6 tablespoons goat cheese, crumbled, for topping

Directions

Step 1 -Cook the orzo pasta according to package directions. Drain well.

Step 2 -Combine the cooked pasta, the chicken, the arugula, the grape tomatoes, the red bell pepper, the red onion, the basil, and the oregano in a large bowl, tossing well.

Step 3 -Combine the vinegar, the oil, the salt, and the black pepper in a small bowl, stirring with a whisk.

Step 4 -Drizzle the vinegar mixture over the pasta mixture, tossing well to coat.

Step 5 -Sprinkle the pasta with the cheese.

Step 6 -Serve.
